Chicken Enchiladas Over Rice


So this past week I have been googling my little eyes out with learning more about health food and I think I spent a little too much time on the computer because I just felt soo sick. Not so healthy spending so much time on the computer!! Every time I opened my computer my head started to hurt. Anyway, I am excited to share what I have been learning, but for now I will just share a delicious recipe that will for sure be added to our rotation of meals! YUM!
Chicken Enchiladas Over Rice
 Ingredients:
1-2 chicken breasts, (about 1 pound) cooked & shredded
1 tablespoon olive oil
1 garlic clove, minced
1/2 medium onion, diced
1/2 red pepper, diced
1/2 (4 oz.) can diced green chiles
1/4 teaspoon salt*
1 teaspoon chili powder
1/2 teaspoon cumin
1 (10 oz.) can green chili enchilada sauce
1/3 cup red enchilada sauce
1 cup shredded cheddar cheese 
1/4 cup plain Greek yogurt
 Serve over Brown Rice

Top with:
Avocado
Green Onions
Tomatoes
Greek yogurt or sour cream
Cilantro
Chips
  
Directions:
*(I somehow forgot the /4 when I first posted the recipe and it was just read 1 teaspoon. So sorry if anyone made it and it was super salty!)
I cooked my chicken by boiling it, then shredding it
Heat the olive oil in a deep skillet and cook onions for about 3-5 minutes.  Add garlic & red pepper and cook for another 3-5 minutes.
Add cooked chicken, green chiles, cumin, chili powder, salt, & enchilada sauces.  Let sauce simmer for about 8-10 minutes.
Add cheese and stir until the cheese is melted and heated through. (If you are watching your cheese/calories intake you can always leave out & and let people sprinkle on (top) their own cheese.) Now stir in the Greek yogurt, do not bring it to a boil! Cook on low heat or the Greek yogurt will curdle. Once mixed and heated through you are ready to devour.

Serves: 4-5

One Ginormous Serving of Oriental Chicken Salad


Dieting & feeling hungry?! This salad will do the trick!
 
This is one of my favorite go to salads when trying to lose a few of those dang pesky pounds that sneak up on me! This salad is so ginormous, it always leaves my belly nice and full! The best part besides it being quick, tasty, and a healthy meal is it is only 315 calories!!


Oriental Chicken Salad
Ingredients:
3 ounces cooked chicken, diced*
3-4 cups cabbage, thinly sliced or shredded
1 carrot, shredded
1-2 green onions, chopped (throw as little or as much as you like in)
4 tablespoon Newman's Own Low Fat Sesame Ginger Dressing
1-2 tablespoons of slivered almonds, toasted (optional)
a splash of rice wine vinegar (optional)
you can also add Mandarin oranges, but I don't like them so I left them out!

Directions:
Combine all ingredients into a bowl & toss to coat. That's it! You can also simplify it by buying rotisserie chicken and a bag of coleslaw mix.

Serves 1 ginormous serving or a couple of servings

* I have cooked my chicken several different ways with this recipe. I have seasoned it with Mrs. Dash or McCormick Chicken Season. I have also marinated it in the salad dressing and then cooked it.

Baked Chicken Taquitos

  We can not get enough Mexican food at our house and this is a great recipe to add to our collection! It is quick, easy, kid friendly, and much healthier than the traditional fried taquitos. This is also a perfect meal for leftover chicken or rotisserie chicken.


Bake Chicken Taquitos

Ingredients:
1 cup chopped onion
2 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon sea salt
1/4 cup chopped cilantro
2 cups shredded cooked chicken meat
1/4 cup salsa
1 can refried beans
12 (6-inch) corn tortillas
1 cup crumbled queso fresco, shredded Monterey jack, or cheddar cheese
Directions:
Preheat oven to 425°F 
Heat olive oil over medium heat in a skillet. Add onion and cook until starting to soften and turn translucent, 3 to 5 minutes. Add garlic, cumin, paprika and salt. Stir to combine and cook 2 to 3 minutes longer, until fragrant. Take from heat and stir in cilantro, chicken, and salsa. Set aside.

Place two corn tortillas between two hot pads and microwave for 30 seconds. (This is a health trick I learned from my sister to make the corn tortillas workable and without having to fry them.)  Lay tortilla on a work surface and spread 2 or 3 tablespoons chicken mixture over bottom third. Top with a tablespoon of refried beans and a tablespoon of cheese and roll up. Place seam side down on a greased baking sheet. Repeat with remaining tortillas. Spray or brush tortillas lightly with oil and bake until crisp and lightly browned, 15-20 minutes.
Serve with salsa, sour cream and guacamole.

Health Tip:
Chicken is an excellent source of the cancer-protective B vitamin, niacin. Components of DNA require niacin, and a deficiency of niacin (as well as other B-complex vitamins) has been directly linked to genetic (DNA) damage. A four-ounce serving of chicken provides 78% of the daily value for niacin.

Chinese Sweet & Sour Chicken


For the past couple of years we have celebrated New Years Eve with our traditional Chinese buffet at home. This healthy version is just as good or even better than what I have had at Chinese restaurants. The best part is, it is healthy, not deep fried, and not dripping with grease.

 Chinese Sweet & Sour Chicken
Ingredients:
1/2 cup whole-wheat flour, more if needed
1 1/2 cup whole-wheat panko breadcrumbs, more if needed
2 large egg whites
3 skinless chicken breasts, cut into 1-inch cubes
Sauce:
2/3 cup rice wine vinegar
1/2 cup sucanat or brown sugar
2 tablespoon ketchup
2 teaspoon soy sauce
4 teaspoons cornstarch mixed with 8 teaspoons water
1 green bell pepper, cut into chunks
1 small can pineapple, chunks

Directions:
Preheat oven to 450 F. 
Place a wire rack (like a cookie cooling rack) on a foil-lined baking sheet, and set aside.
Put the flour in a shallow dish.  Place the panko in another shallow dish.  In a medium bowl, whip the egg whites with a whisk until they are extremely foamy but not quite holding peaks. 
Working in batches, dredge the chicken in the flour (shaking off excess), add the chicken to the egg whites and toss to coat completely.  Add the chicken, a few pieces at a time, to the panko and toss to coat.  Make sure they are completely coated.
Spread the chicken out on the wire rack, in a single layer.  Bake chicken until the breading is golden and crispy and then chicken is cooked through, about 10 minutes.
While the chicken is cooking....
Mix the rice wine vinegar, sucanat, ketchup, and soy sauce together and bring to a boil in a small pot. Mix together the cornstarch and water, add to the other ingredients and stir to thicken.

Add bell peppers, and as many chunks of pineapple as you want to the sauce. When the chicken is done add the chicken to the sauce. Stir to coat and serve over brown rice.
(Serve 3-4)

If you like extra sauce, double the sauce recipe.

Bombay House Chicken Coconut Kurma

 So this is my version of my favorite meal at the Bombay House. I must admit I haven't tried too many because once I find something I like it is hard to try new things!! Well I have tried SEVERAL chicken coconut kurma recipes and they have all come short in comparison to the chicken coconut kurma at the Bombay House. AND THEN, I finally found the recipe with a few modification of my own to match the ingredients listed on their menu!

Chicken Coconut Kurma
Ingredients:
Chicken Spice Marinade:
3 chicken breasts, cut into strips or bite size pieces
1/2 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon turmeric
1/2 teaspoon cayenne
Mix together and marinade for at least an hour.
Sauce:
1 tablespoon vegetable oil
1/2 cup chopped onions
4 large garlic cloves, minced
1/2 teaspoon ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon turmeric
1/2 teaspoon cayenne*
2 ripe medium tomatoes, lightly blended (or 1 can diced tomatoes)
1/4 cup plain greek yogurt
3/4 cup water + 2 tablespoon cornstarch**
1 teaspoon salt
1 can coconut milk
1 teaspoon garam marsala
1/4 cup golden raisins (optional)
1/4 cup cashews, chopped (optional)
garnish with cilantro (optional)

Directions:
Spray large fry pan with non stick spray or a little bit of oil and brown marinated chicken over medium heat, but do not cook all the way through.
In a large pan add oil, garlic, onions, and ginger and cook over medium heat until onions are translucent. Then add the remaining spices (except salt and marsala) and cook for another minute. After that, add the tomatoes and simmer for 3 to 4 minutes. Add the yogurt and blend in with a wire whisk. Then add the browned chicken, water cornstarch slurry and salt. Bring to a boil, then cover and simmer for 20 minutes.
Stir in the coconut milk, garam masala, and golden raisins then simmer uncovered, stirring occasionally, until the sauce becomes fairly thick. Serve over brown jasmine rice and top with cashews and cilantro if using. 

*This is a medium heat level, if you want it milder reduce the cayenne pepper by 1/4 teaspoon or 1/8 teaspoon. 
**The recipe that I adapted it from never thickened like it claimed that it would,  so I added some cornstarch. I might try adding less water next time.

This can be a good news for people who are trying to reduce weight. Coconut milk makes you feel full very quickly because of high concentrations of dietary fiber.

Healthy Chicken/Turkey Salad Sandwich

 
One of my favorite foods that I look forward to around Thanksgiving is actually the leftover turkey. I love turkey sandwiches and I also love my mother in laws chicken/turkey salad sandwiches. It is one of our favorite dishes to serve at parties and it a great way to use up the extra turkey leftovers. The best part is (besides the taste) it is way healthier than the typical chicken salad sandwich.

Healthy Chicken/Turkey Salad Sandwich
Ingredients:
3-4 cups cooked chicken or turkey, shredded
3/4 cup craisins (or grapes cut in half)
1/2 cup celery, diced
2 green onions, chopped
1/2 cup light mayonnaise
1/2 cup plain Greek yogurt
1/4 + 1/8 teaspoon garlic salt
1/4 teaspoon curry powder
1/2 teaspoon lemon juice
salt & pepper to taste
1/2 cup cashews, diced or halves

Directions:
Mix the first 9 ingredients together and salt & pepper to taste. Right before serving mix in the cashews. Serve with bread.

Health Tip:
Turkey is an excellent source of protein, providing 68% of the DV in a four-ounce portion. Along with protein, turkey is a very good source of immune-supportive selenium and heart-healthy niacin and vitamin B6.

Sweet & Sour Chicken

This recipe was posted by my sister in law Erin!
This original recipe has been in my family for a couple of years now and has become a favorite go to meal! I actually received it from a good friend when we were doing a freezer meal group together and ever since I have made it a couple times a month. The only problem, is that there is a ton of sugar in it! It is so good, that up until now I have looked past that and justified it by serving lots of veggies with it! But thanks to this blog, I have found wonderful substitutions, and it still tastes just as good, possibly even better!! I have made this several times for other people, so believe me, it passes the test! 

Sweet and Sour Chicken
4 boneless skinless chicken breasts, cubed
cornstarch
1 egg

Sauce
3/4 cup honey
3/4 cup pinnapple juice
8 tablespoons ketsup
1 cup vinegar (apple cider vinegar works too, but it does change the original flavor some)
2 tablespoons low sodium soy sauce
1 teaspoon garlic powder

Place egg in a gallon sized ziploc bag and mush until well mixed together. In another bag add a good amount of cornstarch ~about 1 1/2 cups. Place cut up chicken into the egg bag, seal bag, and shake it around until the chicken is evenly coated with egg. You shouldn't see very much if any excess egg in the bottom of the bag. With a slotted spoon, transfer chicken from egg bag into cornstarch bag. Seal bag and shake around until chicken is now coated with cornstarch mixture. 
In a medium bowl, mix sauce ingredients together, stir until well blended. Set aside.
In a large skillet, heat a small amount of oil (I use coconut). Fry chicken just until browned. Place chicken in a shallow baking dish and top with sauce. Bake at 325 for one hour, turning chicken once about half way through. 

*In my family we like extra sauce for our rice, so this recipe is doubled from the original. If you don't like a lot of sauce, feel free to cut the recipe in half!

Chicken Pot Pie

This recipe was posted by my sister in law Erin!
This pot pie is delicious! I actually prefer it to traditional pot pies! I found this recipe about a year ago, and it has been part of my family's menu rotation since. I have made a few changes to make it lighter, and more to my family's taste. Feel free to do the same, if you don't like any of the vegetables in this recipe, switch them out with those that you do like! 

Chicken Pot Pie
2 teaspoons extra virgin olive oil (or your favorite oil, I have also used coconut oil & butter)
1/2 cup plus 2 tablespoons fat-free reduced sodium chicken broth, divided
2 cups chopped, fresh mushrooms
1 cup diced red bell peppers
1/2 cup chopped onion
1/2 chopped carrots
1 green onion/ shallot chopped
2 tablespoons flour (I use white, feel free to try it with a different kind, I've never been brave enough!)
1/2 fat free half-and-half
2 cubed cooked chicken breast
1/4 teaspoon dried dill
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can low fat crescent rolls

1. Prepare your chicken. I like to add garlic powder and pepper to my chicken while I cook it for added flavor. Set aside when cooked through
2. Heat oil and 2 tablespoons chicken broth in a medium saucepan or skillet over medium heat. Add mushrooms, bell pepper, onion, and carrots. Cook 7-10 minutes, or until vegetables are tender, stirring frequently. 
3. Stir in flour; cook 1 minute. Stir in remaining 1/2 cup chicken broth; cook and stir until liquid thickens. reduce heat and stir in half-and-half. Add chicken, green onion, dill, salt and pepper.
4. Preheat oven to 375.  Spray one quart casserole dish with non stick cooking spray. Add chicken mixture into dish, top with unrolled crescent rolls.
5. Bake pie for 20 minutes or until crust is golden and filling is bubbly.

Chicken Wonton Soup

This soup turned out great! It's definitely one of those soothing soups that is great for a cold day or just a bad day! It has the feel of an oriental soup, but not real strong oriental flavors. The main flavor is chicken.  My husband hates soup, and he even thought it was a decent soup! So hopefully that is a good enough description for you to know if your family will like it! I really liked it!

Chicken Wonton Soup

Chicken Wontons (see recipe below)
8 cups fat-free chicken broth
2 cups fresh baby spinach leaves
1 cup sliced carrots
1/4 teaspoon salt
1/8 teaspoon black pepper

Prepare your wontons first! In large saucepan, heat chicken broth, spinach, carrots, salt and pepper to a boil. Reduces heat to low and simmer, covered, 10 minutes. 
Return soup to a boil; add chicken wontons. Reduce heat to a low and simmer, uncovered 2 to 3 minutes or until wontons are tender and rise to the surface of the soup.

Chicken Wontons

1/3 cup of ground chicken, or 1/2 large chicken breast chopped.
1 tablespoon minced shallot or onion
1 clove minced garlic
1/8 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon black pepper
24 wonton wrappers
water

In a small amount of oil, brown chicken, shallots, garlic, salt, pepper and nutmeg.  If you are using cubed chicken, place cooked chicken in a food processor and shred into small pieces. Using a teaspoon or small cookie scoop place a rounded spoonful of chicken mixture in the center of 12 wonton wrappers. Using your finger moisten each edge of wrapper with water. Top with remaining wrappers, and press to seal edges. Refrigerate until ready to cook.

1 bowl of soup (1/6 of prepared soup) and 2 wontons equals 130 calories!

Chicken Pesto Goat Cheese Pizza


 So excited to share this recipe! I had this pizza last night for dinner and was dying to have it for breakfast! I don't know if it's because of the oat flour pizza crust or because I am obsessed with goat cheese! Whatever it was, it was the perfect blend of flavors.

Chicken Pesto Goat Cheese Pizza
Oat Flour Thin Crust Pizza Dough
Ingredients:
2 cups oat flour
1 cup hot water
¾ tablespoon rapid rise yeast
1 teaspoon honey
1 tablespoon olive oil
½ teaspoon salt

Toppings:
(With pizza I never really measure how much I put on so here is a rough estimate)
¼ cup pesto-basil sauce (or enough to cover your crust)
½ - 1 cup goat cheese
½ - 1 cup mozzarella
½ - 1 cup shredded cooked chicken (when cooking season to your liking)
¼ cup purple onions
8 ounces of sliced raw mushroom (sauteed before putting on pizza)
I threw on some diced tomatoes, but it would be fine without
shredded parmesan cheese

Directions:
Preheat oven to 450 degrees with pizza stone in the oven.
Add all ingredients into a mixing bowl; mix well. Knead for 10 minutes and until dough is no longer sticky (adding flour if needed).
Dust pizza peel or large wooded cutting board with corn meal (enough for the dough to slide off board).
Roll out dough into a thin round circle, shaking the board every few rolls to make sure the dough isn't sticking.
Slide the rolled out dough onto the pizza stone and let cook for about 5-7 minutes.
Take out the whole thing (stone and crust) and add toppings.....

Spread pesto-basil over crust, top evenly with cheeses, top with shredded cooked chicken, mushrooms, purple onions, & tomatoes. Sprinkle top with additional cheese (optional) and Parmesan cheese.

Put back in the oven for another 10 minutes until crust is fully cooked.

Healthy Chicken Enchiladas

My husband didn't even realize I made a few little swaps to make this bad boy HEALTHY! They were SOOO good! (If you have really picky eaters, like I sometimes do, you can always use half wheat tortillas & half white.) I like wheat & my husband sometimes likes wheat.

Healthy Chicken Enchiladas
Ingredients:
Filling:
3 cups cooked, shredded chicken
2 (4 oz.) cans of green chiles, lightly drained
½ teaspoon cumin
1 cup of cottage cheese
Sauce:
1 teaspoon butter
½ cup chopped onion (about 1/2 medium onion)
2 tablespoons flour
1/3 cup chicken broth
¼ cup milk
¼ teaspoon salt
¼ teaspoon pepper
1 can (10 ounce) green chile enchilada sauce
½ cup plain greek yogurt
Monterey jack cheese or cheddar, shredded (as much or as little as you like) (I used about 1-1/2 cups)
8 wheat flour tortillas
Suggested toppings- handful of chopped fresh cilantro, green onions, tomatoes, and a dollop of greek yogurt.

Directions:
Preheat oven to 375 degrees.
In a blender, blend green chiles, cottage cheese, and cumin until smooth. In a separate bow, add cottage cheese mixture to shredded chicken. Mix to combine. Set aside.
In a large nonstick skillet, melt the butter over medium heat. Add the onion and cook, stirring occasionally, until the onion softens and starts to turn translucent, about 3-4 minutes. Sprinkle the flour over the onions and stir well. Cook for 1 minute, stirring. Slowly whisk in the chicken broth and milk. As you whisk and the mixture cooks, the flour will get less lumpy around the onions and the mixture will become smooth. Add salt & pepper. Cook over medium heat until the mixture is bubbling and has thickened, about 4-5 minutes. Remove the skillet from the heat and stir in the enchilada sauce and greek yogurt.
Lightly grease a 9X13-inch baking dish. Spread about 1/4 cup of the sauce on the bottom of the dish. Fill each tortilla with about 1/3-1/2 cup of the chicken/cottage cheese filling. Top with shredded cheese. Roll the tortillas up and place seam side down in the prepared baking dish. Continue filling enchiladas until the dish is full.
Pour the white sauce over the top of the enchiladas. Top with cheese (I did about ½ cup). Bake for 20-30 minutes until the enchiladas are bubbling, hot and lightly browned. Sprinkle fresh cilantro, green onions, tomatoes, and greek yogurt over the top and serve.

Coconut Chicken Curry

Ever since I had the Chicken Coconut Kurma at the my favorite Indian restaurant, Bombay House, I have been obsessed with coconut chicken curry recipes. I haven't matched the Bombay House's recipe, but this one is quite delicious!
Coconut Chicken Curry
Ingredients:
4 boneless skinless chicken breasts (about 2 pounds), cut into 1/2-inch chunks or strips
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoon coconut oil
2 tablespoons curry powder
1 teaspoons cayenne pepper (substitute paprika pepper if you don't like the heat)
1/2 onion, thinly sliced
2 cloves garlic, crushed
1 (14 ounce) can coconut milk, light or regular
1 (14.5 ounce) can stewed tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons honey
Hot cooked brown rice

Directions:
Season chicken pieces with salt and pepper. Heat oil, curry powder, and cayenne pepper in a large skillet or saucepan over medium-low heat for two minutes, until fragrant (but don’t let it burn). Turn the heat up to medium and stir in onions and garlic and cook 7-9 minutes more or until onions are very clear. Add chicken, tossing lightly to coat with curry oil and cook for a couple of minutes. Add coconut milk, tomatoes, tomato sauce, and honey into the pan, and stir to combine. Cover and simmer, stirring occasionally, for about 30 minutes or until sauce thickens and making sure chicken is cooked through and no longer pink. Serve with brown rice and garnish with cilantro, if desired.

Spinach Chicken Stuffed Shells


This meal is definitely going on the menu rotation at our house! It is so yummy, and if you plan ahead, is pretty quick to prepare too! I got this idea for a meal because I had a bunch of spinach that I needed to use quickly. My first idea was lasagna, but the day I went to cook it I didn't have enough lasagna noodles! Luckily, I had shells... which in my opinion can be even better! This makes a lot, so feel free to cut the recipe in half if you are not feeding very many, or do not want leftovers! I welcome leftovers, so this was perfect for a full dinner and lunch for my whole family (2 adults, 2 children). 

Spinach Chicken Stuffed Shells
 2 large chicken breasts, finely chopped
1/2 medium onion, finely chopped
2-4 cups of chopped spinach (the amount is just to your liking) 
>1tbsp. olive oil
ground pepper to taste
garlic powder to taste
3 cups low-fat cottage cheese
2 eggs
1 tbsp. parsley 
1 tsp. salt
1/2 tsp. pepper
1/2 c. parmesan cheese
1 c. mozzarella cheese, shredded
about 23 jumbo pasta shells, cooked, and drained

Combine Chicken, onion, pepper, garlic, and olive oil in large saucepan. brown until chicken is cooked through. Add spinach a cup at a time until wilted enough to add more. once all spinach is added and cooked through, remove pan from heat and set aside. 

This is what mine looked like. You can tell I didn't originally chop the spinach, and I wish I had! It is much more kid friendly when you don't have long strings of spinach coming out of your shells! 

In a large mixing bowl, combine cottage cheese, eggs, parsley, salt, pepper, and parmesan cheese. Once well mixed, add the chicken mixture.  Begin filling your shells! I used a large soup spoon, and scooped heaping spoonfuls into the shells. It was the perfect amount. Pack your shells into a large baking dish, sprayed with non stick cooking spray. 


My mouth was watering at this point! I could not wait to eat them!! 

Top shells with mozzarella cheese, bake in an oven at 350 degrees for 15 minutes or until cheese is melted and bubbly.  Enjoy your yummy meal!!!

Recipe Tips: I used my food processor to chop my onion, and chopped my chicken about a 1/4 of the size I usually cube my chicken. I think the closer to the same size everything is, the easier it all fits into the shells, and the better each bite is because you get a little of everything! 
If you have extra mixture, it freezes great for future use, or just dump it over the top of the shells before you put the cheese on!

Guess what?? We all know that Popeye made himself super strong by eating spinach, but you may be surprised to learn that he may also have been helping to protect himself against inflammatory problems, oxidative stress-related problems, cardiovascular problems, bone problems, and cancers at the same time. Sweet! Eat more Spinach!!
