Crock Pot Sweet Potatoes

This recipe was posted by my sister in law Erin!
If you are a fan of sweet potatoes, this is a great variation so that you or your family doesn't get bored with the same ol' recipe! This had so much flavor, sweet, savory.... yummy! The best part is that they are done in the crock pot, so you don't have that last minute stress at meal time trying to prepare a side your family will eat and enjoy! I have a really hard time getting Kaleb to eat anything orange and cooked, once I got him to take a bit of these he gobbled them up! Hope you enjoy them too!

Crock Pot Sweet Potatoes
Ingredients:
6 medium sweet potatoes, peeled & diced
1/4 cup low sodium, fat free, chicken broth
1/4 cup brown sugar (unpacked)
2 tablespoons butter
1 teaspoon cinnamon
1/4-1/2 cup craisins (depending how much you like them!)

Place all ingredients in a crock pot, turn on high and cook for 4 hours, or until fork tender!

Health Tip
One difficulty in describing the health benefits of sweet potatoes is knowing where to begin. There are a surprising number of nutrient categories responsible for the health benefits of this underappreciated tuber. Among these categories are antioxidants, anti-inflammatory nutrients, and blood sugar-regulating nutrients. Each category brings with it valuable health benefits.
