Best Coleslaw Ever!

This is my all time favorite coleslaw and the recipe comes from my mother in law!! It is sooo good!
Every time I take this coleslaw to a potluck or party, it never fails to get compliments and I ALWAYS have someone ask if they can have the recipe.

Coleslaw mixture:
6 cups cabbage, shredded
1 1/2 cup carrots, shredded
1/3 cup red onions, chopped
3/4 cup craisins
1 cup pecans, chopped and toasted
2 apples, chopped
3/4 cup butter milk
3/4 cup light mayonnaise (I have also used half light mayo and half Greek plain yogurt)
4-5 tablespoons sweetener of choice (evaporated cane juice, stevia, sugar, etc)
1/4-1/2 teaspoon pepper
3/4 teaspoon salt
4 1/2 teaspoon lemon juice
Combine sauce ingredients together in a bowl; mix well. Mix all other ingredients (coleslaw mixture) together in a large bowl. Pour the sauce over the coleslaw mixture.

Did you know cabbage helps prevent cancer?!
Cancer prevention tops all other areas of health research with regard to cabbage and its outstanding benefits. More than 475 studies have examined the role of this cruciferous vegetable in cancer prevention (and in some cases, cancer treatment). The uniqueness of cabbage in cancer prevention is due to the three different types of nutrient richness found in this widely enjoyed food. The three types are (1) antioxidant richness, (2) anti-inflammatory richness, and (3) richness in glucosinolates.

  1. WOW! Jolene I am SOOOO impressed with the website and the recipes! All these look amazing. Even the pictures! I can't wait to try them and let you know how it goes!!

  2. Thanks, Dana! I hope you like them & if you have any yummy healthy recipes let me know! I should ask Katie too!

  3. Aileen told me about this site because she is so proud of her daughter-in-laws. Since I love her cooking and love her, I had to try it out. Have you asked her about the broccoli ham ring? It's one of my favorites she makes! I look forward to using your sight. Please tell Blake and Wade, Sister Irvine in Alaska said hello!

  4. Dona, Thank you for stopping by! I hope that you find this site useful! Jolene and I couldn't have been luckier to have Aileen as our mother-in-law! Even if Blake wasn't as great as he is, I might have still married him just so I could have Leen!! She has already given me several tried, true, and healthy recipes, so I am looking forward to featuring her more on our site! P.S. I am from Fairbanks, so we may have crossed paths too!

  5. I couldn't agree with you more, Leen is a wonderful person. She's had a huge impact on my life in such a quite way. One of our favorite things to do while we were stationed at Eielson together, was to take long walks in the morning and most of that time was spent talking about cooking.

Maybe we did cross paths. I live in Palmer now, but if you and Blake come up to visit family and are down this way, I'd love to meet you in person and see Blake again. BTW... You're right, he is a pretty great guy. Loved your comment about marrying him anyway. ;)
