Almond Joy Pancakes




This is a pancake recipe I got from my mom, that we grew up with, with some tweaks of my own to make it one of my favorite candy bars. Blender wheat pancakes are a great way to get ALL the health benefits of the full wheat kernel. No refining here! 
 
Almond Joy Pancakes
Coconut Blender Wheat Pancakes
Ingredients:
1 cup light coconut milk, carton or canned
1 cup whole wheat kernels
1 egg
2 tablespoons stevia, or other sweetener
¼ cup unrefined coconut oil
½ teaspoon salt
1 teaspoon baking soda
2 teaspoon baking powder
grain sweetened chocolate chips
 Top with:
healthy whip cream*

Directions:
Combine milk and whole-wheat kernels in a blender. Blend on high speed until wheat kernels are finely ground. (Or blend to desired texture.) Preheat griddle to 375 degrees. Reduce blender to medium speed. Add egg, sugar, oil, salt, baking soda, and baking powder. Lightly grease preheated griddle. Pour ¼ cup of batter onto griddle and sprinkle with grain sweetened chocolate chips.

* Healthy whip cream options- homemade or store bought (checking the ingredients to make sure it's healthy)
Homemade Healthy Whip Cream
Ingredients
1 cup heavy whipping cream
stevia to taste
1 teaspoon of vanilla extract (optional)

Directions:
Pour whipping cream into a large bowl. Sweeten to taste with sweetener and vanilla extract (optional)
Whip with mixer on high speed using whisk attachment until fluffy and forms stiff peaks.
